For breakfast...in 2:30 secs.

Ingredients:
-2 eggs
-1/4 cup chopped baby spinach (I buy "ready to eat" bags in the produce dept) You need to chop.
-1tbsp mix cheese (use your favorite)

Instructions:
-Beat two eggs and mix spinach pour on microwave plate
-microwave for 2:20 sec. (I have 900watt mic.)
-sprinkle cheese over it and microwave for 10 sec.
-make sure to unstick eggs quickly from the plate or you WILL have to scrape it.

As Irenera would say WALA!!:D

Hint:
You can add your favorite ingredient but, my need to alter the time.

-Easy throw it all together in a small bowl and mix it.

Ingredient:

-3/4 cup coffee
-2 tbsp hershey chocolate syrup or cocoa powder (I use ovaltine)
-3/4 milk
-2 tbsp sugar (I use 3 :D )
-Ice

Instructions:

-Stir ingredients without the ice first, then add ice and stir.

Hint:
Add whip cream from a can for decor and taste..watcha Starbucks!:D

Here's a quick main dish that also doubles as a "fancy" dinner if served with steamed vegetables and wild rice.

French Country Chicken
1 lb. boneless skinless chicken breast pounded about 1/2 to 3/4 inches thin. Coat in bread crumbs (Italian flavored are good) and cook at 350 degrees for 15 minutes. The thinner the chicken the faster it cooks.
Remove from oven and top with lemon flavored white cooking wine (next to most vinegars in store) over this layer about 4-5 slices of muenster cheese and drizzle a little more cooking wine. Cook until cheese is light gold colored and bubbly. In addition to wonderful it is also a healthy meal as it conforms to my diabetic diet.

I found this granola recipe over in the produce dept. I tried making it but, maybe you have better luck. Since I found the granola bag at Target one time I figured I didn't have to nail the recipe down. I hope you have a better luck with it.

Ingredients for Granola:

3 cups old-fashion oats
1/2 cup wheat germ
1 cup sliced almonds
1/4 cup sesame seeds
1/4 cup honey
3tbsp. melted butter
1/tsp. salt
1/2 cup raisins

Instructions:

Combine oats and wheat germ in large bowl. Spread on a lightly greased baking sheet. Bake for 10 min., stirring occasionally. Remove from oven Pour into bowl. Stir in almonds, sesame seeds, honey, melted butter, and salt. Spread on baking sheet. Bake for 15 min. more, or until lightly browned, stirring every 5 min. Remove from oven. Cool to room temperature and stir in raisins, breaking up large granola cluster.

Let me know if you have better luck.:)

Cranberry Turkey Sanwich

Ingredients:

Sliced wheat bread-Mrs. Braids 100% whole wheat (or your favorite sliced bread.)
Oven roasted turkey (I use butterball from the local deli)
I can of cranberry sauce. (whole, sliced it doesn't matter)
Lettuce - optional
Tomato - optional
Miracle whip.
Prepared baby carrots or celery

Instructions:

Make yourself a sandwich. The only trick is to slice the cranberry. I like to use a lot of cranberry but, some people like to just spread a little.
The carrots or celery are a substitute for chips.

Spaghetti with Bratwurst...

-Johnsonville Bratwurst sausage Original, Beer or Italians flavor
-Wheat Spaghetti (wheat doesn't starch up like the regular)
-Favorite Spaghetti sauce
-Shiner Bock beer - optional
-Small onion sliced or chopped - optional
-Parmesan cheese - optional

Instructions:

Boil Spaghetti and no need to add oil to the water just salt and cook as directed.
In a frying pan cook bratwurst whole and add 3/4 bottle of beer, I drink the rest.:D When done pour the liquid out slice sausage to brown a little and add the sauce. Add parmesan cheese...

I could add a thin slice but to me cranberries are like Sabritas. "A que no puedes comer solo una" or Pringles "once you pop you can't stop". I do stop, but as the Deacon says, "it's so haaaaaawwwwwwddddd"

Please do NOT buy spinach. I just heard in the news that some are tainted with e-coli. People have gotten sick. I buy it frequently so thank goodness I have no symptons.

I heard the same thing on the news, but Texas is not on the list. Most of the states are in the North, and Northeast. Anyway, the absolute best investment is a salad spinner to wash leafy produce. Also, it is safe to use small amounts of plain soap to wash fruits and vegetables with thin skins. Even when buying bagged produce, it is imperative that it is not eaten straight from the bag even though it says triple washed. The produce is coated with spray preservatives and that invites unwanted critters. I had a friend that worked at Fresh Express, the company that bags a lot of the produce we see in local stores.

peanut butter is protein I just use wheat bread with sugar free preserves, I dont really like eggs too much but If I'm really in the mood I use egg beaters and make an omelet with it

I was just hoping for more recipes. I am not a big fan of eggs either unless they are scrambled otherwise, (other styles) I have to pour syrup over it.

Flaco lives on peanut butter. Plain. Eaten right off the spoon. I like it, but not like that. That's why he weighs 140 lbs soaking wet and I don't!:D At 5-11 no less. Eggs.Yummmmmmm. Anytime, any way. I love them. Too bad I can't have them often. Try making quiche. It's a good way to incorporate them into your diet. Waffles and peanut butter....that was my breakfast although it's usually oatmeal sprinkled with wheat germ.

Another thing to remember is that we don't get nearly as much fiber as we should and fiber in addition to the protein is what gives us a feeling of fullness. Try adding a little wheat germ to the shakes. It gives it a nutty flavor.

Ingredients:

- 4 qts. water
- white or brown rice (for this I like white)
- 3 skinless, boneless chicken breast
- 4 or 5 tbsp of knorr powder chicken bouillon

Instructions:

-Bring water to a boil
-Add bouillon
-Cube the chicken and add to pot
-Add rice

Ready when rice is done. It goes well with bread and butter.
One more thing careful b/c soup is really hot.

Brown rice is an acquired taste. Of course it's going to taste bad, it's good for you! White rice has been milled, polished and who knows what else. Over 50% of all nutrients are removed when processed and then enriched with the same nutrients. Did you know white rice has trace amounts of arsenic?
Anyway, the trick is cook it in either beef or chicken broth and use seasonings generously. I have a really good recipe that calls for brown rice, chick peas, tomatoes, and lots of cumin. Luego te lo doy.

OK Norma Rae, my mom learned from my Polish grandmother and I learned from her. I did not know they even made them with marshmallows until I made friends with a bunch of Southerners.:D
The way I've been making them for over 20 years is really simple.
I take about 3 to 4 sweet potatoes, peel them and slice them (not too thin) I put them in water with a few cinnamon sticks and bring them to a boil but only cook them about 3/4 of the way through. I take them out and arrange them in a casserole dish. I don't mash them. In a saucepan with about half a cup of water, I add 1 cone of piloncillo, a few cinnamon sticks and the peel of one orange. I let it simmer until the piloncillo has completely dissolved and has become thick like syrup. While still warm I pour over the sweet potatoes until they are all covered. I also put in the cinnamon sticks and the orange peels. I bake it at about 350 in the oven until warmed through. And as you say, Wala!
I don't know if this is what you're looking for. Maybe I'll stop at Luby's and try them just to see what they taste like. How's that?

i cut up the sweet potatoe's mix it in some cinnamon, a little nutmeg,ginger and my secret ingredient.....I use egg nog, top it with marshmallows mmm...bake it in the oven YUM! I love cooking a ton of food for Thanksgiving and then watching everyone enjoy!!

Welcome to Irenera world. We get students from all over the world. I get confuse on what they are asking. they get confuse on what I am saying. They talk so fast and stumble with the English, I try to catch a word here and there. So, Ok, the blind leading the blind. :eek: by the time I finish with the student, I don't even know what language I end speaking.:D

My little chisiquis loves Alfredo sauce and she loves seafood. I wanted to try something new today that would be really really quick. While I normally make my sauce from scratch, today I used a jar!!! Woohoo!
With a twist.;)

1 sm. bag crab meat from the seafood department
1 cup of small cooked shrimp
2 tablespoons parmesan cheese
3 tablespoons margarine or butter
Garlic to taste

Saute crab and shrimp in margarine or butter for 3-4 minutes. Add jar of Classico brand Alfredo Sauce and add parmesan and garlic. Bring to a simmer and there you have it! Serve over fettucine and add pepper and more parmesan if you want. Chisquis and Flaco both had two helpings each!

Hey, do you know how to make the Alfredo pizza like cici's? My daughter didn't like the (several) alfredo sauce from the jar. Like me, she doesn't care for red sauce on pizza.

Anyway, the thing is to add the cheese a little at a time b/c that is where you get the mild or strong flavors. I've never been to CiCi's but the little one has with friends. I have had it at other places and the taste is fairly mild so that means that there is very little cheese in it and no garlic.

A good base will give you a good cream sauce no matter what it is.

Like Edith, I didn't answer your question. You make the pizza like you would any homemade pizza but instead of using the tomato based sauce, you use the cream based one.

I wish I could enjoy pizza like everybody else. I get some nasty migraines if I have more than half a slice. :mad:

Only the one I make at home. What kills me with restaurant bought stuff is all the cheese and the preservatives in everything else.

The majority of migraines are cause by food allergies and I have them. We have a Whole Foods that I get stuff from and I also try to use organic when I can. You know what makes it so hard??? I LOVE TO EAT!!!!! I don't mean just eat and eat, I mean I love the flavor, the texture, the feel of different foods. When I eat, I want my meal to be one that I can enjoy and it is hard to do when certain foods give me headaches.

Try this one

Fettuccine
shrimp
1 big onion
four lemon
3 large tomatos
:p 3 teeth of garlic
bell pepper/one red.one green/one yellow
a pinch or two of salt

Boil your fettuccine with olive oil and and a little salt

clean your shrimp wash and drain,then soak it on lemon juice
cut your onion,bell peppers,and tomatos on length wise
shred you garlic/or mash

Drain your shrimp,

On a wokk put one and a half stick of butter and garlic what ever kind you like

Put in your shrimp on th wokk to cook for two or minutes or til shrip turn a little red or depending on what kind of shrimp you are using.

Then put in lemon juice , about three depending how you like it.
(1) put in all your pepper let it simmer for a two or three minutes, check on the pepper you don't wanted over cook.
(2) put in your onions for a minute
(3) put in your tomatos, don't let the tomatos over cook
a pinch or two of salt but to your liking


check the wokk to make sure its not dry, you don't wanted too dry use more lemon juice,

Every think is done, you got two choice, put the already cook fettuccine on the wokk and mix it or serve fettucine then put everything else on top of the fettucine and parmenson cheese on top. Frensh bread/gralic bread or bread sticks from Little Casear and a little vino:D

You can use Italian Sausage with with the classico alfredo sauce
You fine italian sausage at HEB, cut to small pieces, cook with alfredo sauce.

boil your fettuccine, then mix or serve fettucine on first then the alfredo sauce on the top. Frensh bread and a salad

Ingredients:
1 package of chicken (already sliced strips)
4 cups corn flakes
1 small box of egg substitute (egg beaters is my favorite brand)
salt and pepper or your favorite seasoning

Recipe:
Heat oven to 425 degrees

Pour corn flakes in a large plastic ziploc and crush with rolling pin (you can add your seasoning at this time and mix)

Spray cookie sheet with cooking spray and set aside

Cube chicken into 1 inch bites

Pour egg substitute into large bowl, dip chicken then put in cornflakes bag.

Set chicken bites on cookie sheet and cook for atleast 12 minutes.

*Next time I will mix in coconut into the mixture and see how that comes out.:confused:

Has anybody started cooking for lent, since it started Wed. I will start Saturday with Gambo. I did my gro shopping during my lunch hr. I went and got a jar of ragn cajun, light Roux. Fresh Shrimp,crab leg meat,two losbster tail and two chicken brest that will be for my meat. My vegies two bell papers, one onion,celery,two rip tomatos and some fresh okara, one hot pepper,and rice. And two boxes of Jeffy corn bread. i hope I am not forgeting anything else. No capirotada, but an apple tort. that should do it for opening day of lent. What else do you all do, so maybe I can put in a different meal the following Saturday.:rolleyes:

For 6 people and if I have left overs than it will be Sunday supper. I love Pasta Primavera, but Dr. took me out of pasta,breads,potatos and etc I am a little over my my cholesterol and trig. just on the border line.
I plan to bake the lobster tail for 20 mi then take it and cut it into square pieces and let it finish cooking with the gambo. Enchiladas sounds good and I like them with white cheese, but than again cheese is one of my no,no's. Darn, its hard to think of food I can eat. :mad:

Girl I live most of my life with out all the extras. Thats how I learn that it had nothing to do on what I eat or the exterice I done, of course it help some how, but my body makes it or maintain on what ever I ate. Maybe I learn it before the Dr. ever found out. I even got mad at the Doc, and told him you have a medication that is one fits all, and it didn't work for me, because even doing the right thing did not work. I have to live with it and try to keep it low as much as I can.

I thought about ceviche tostadas but didn't have the time......I made ceviche with canned tuna. It turned out really good and both flaco and I really liked it. It's made just like you would ceviche but less than half the time.

Try tuna fish patties. Boil some potatos and matsh potatos with a little butter than mix it with tuna fish. Whip some egg white and put patties on egg white then fry them.

Aslo you can try shrip quesadias, easy to make. My sis made ceviche and I didn't like it at all, maybe its the way she made it. I always belive that is a person cooks with love, no matter what it is I will come out one of the best. My family use to say after they ate, "nadian te gana." :rolleyes:

I make tuna patties as well as salmon patties often, but I try to stay away from the fried stuff and potatoes. Both wreak havoc with some of my ailments. Shrimp quesadillas....yuck! Shrimp and cheese hardly ever go together and if they're made with flour tortillas then double yuck! I could try the tuna with the potatoes and maybe bake them.....that might be good. Thanks!:)

Southern crab cakes with remoulade dipping sauce
very easy-from diabetic cooking magazine
Makes 8 servings
A favorite on every coast, this Southern-style crab cake appetizer is served with a low-fat version of the classic New Orleans sauce. The crabmeat mixture may be covered and chilled up to four hours before cooking.
Ingredients:
10 ounces fresh lump crabmeat
1-1/2 cups fresh white or sourdough bread crumbs, divided
¼ cup chopped green onions
½ cup fat-free or reduced-fat mayonnaise, divided
1 egg white, lightly beaten
2 tablespoons coarse grain or spicy brown mustard, divided
¾ teaspoon hot pepper sauce, divided
2 teaspoons olive oil, divided
Lemon wedges

Preparation:
1. Preheat oven to 200°F. Pick out and discard any shell or cartilage from crabmeat. Combine crabmeat, 3/4 cup bread crumbs and green onions in medium bowl. Add 1/4 cup mayonnaise, egg white, 1 tablespoon mustard and 1/2 teaspoon pepper sauce; mix well. Using 1/4 cup mixture per cake, shape into 8 (1/2-inch-thick) cakes. Roll crab cakes lightly in remaining 3/4 cup bread crumbs.

Well only one kiddo remembered us. But we got some stuff from the school, including breakfast and the PTO gave us a cool T-shirt. Over all it has been nice. At least they remembered the teacher aides unlike other years.:rolleyes:

At T-MOBILE in the valley, they have incentives for their employees... theather room, massage room, quiet room, aroma room, mom's room (for those mothers that breast feed). It's something else. I have a friend that works there. THey hire quite a few people.

You need to fine a job where they teach massage therapy.:D I get three free diffirent kind of message per semester. They teach it here under continue education. Their finals is giving us message. I don't like the aroma therapy, its tooo soft, too delicate. I like the one that is ruff give me pain. I like them to use their elbow, knuckles and give me chops with the side of the hand. When finish boy it feels so good, and one feel very refresh. So I learn how to give massage just by getting message every semester for 31yrs. But everthing must come to an end. ;)

I do make my own sauce, but I am looking for a different flavor. I make them with mole, salsa verde, salsa roja, and fresh tomato but I want a new taste. Maybe while I am recuperating I can play around in the kitchen.
I've never had the casserole but I love the New Mexico layered enchiladas with the fried egg on top.

I do make my own sauce, but I am looking for a different flavor. I make them with mole, salsa verde, salsa roja, and fresh tomato but I want a new taste. Maybe while I am recuperating I can play around in the kitchen.

Had them at ABUELOS on Saturday night. They are typical of New Mexico and they are pretty good. A lot of the Mexican restaurants here have the New Mexico and Arizona influences in the dishes they serve.

My brother said he had some breakfast enchiladas the other day that were to die for. They had egg, sausage, tomatoes, onions and cheese. Rolled in a tortilla then with the sauce on top. Topped with more cheese. YUMMY!!!

that sounds like an omelet from IHOP. Sometimes the use the same doug from pancake expect they make it very thin like a tortilla. The other place that make it with corn tortilla is at Mi Tierra, or Pico de gayo.

Now let me tell you the worst I ever ate. My husband was doing his two weeks national guard at Weslaco, down the valley. I as for chicarons con chili. they brought me one bowl with hard chicarons un cook and a small plate with two chile serano. :eek: maybe I look all chuntara from down Mexico. I started to laugh and told my husband might as well an ask for a bottle of teqilla and put it on the table and add some mariaches:confused: :D :o

I have found that at times i'm very busy and I want a quick salad. I just go to HEB and buy the pre-mixed salad bag and I then go and buy the bag of skinless chicken. I heat up the chichen in microwave....add it to the salad put my favorite dressing and i'm ready to go.



Somebody give me some good salad recipes! I don't want the stove on anymore!:eek: No pasta salads though, I can't do noodles very often.:( :mad:

I tried your suggestion except I cooked my own chicken and it came out really good. I spruced it up a little with walnuts and raisins and it was delish!

1 small banana
3/4 cup milk
1/2 cup nonfat sugar-free flavored yogurt (try Strawberry)
1/4 cup orange juice

Blend all ingredients until smooth.

Yield: about 2 cups
One serving: 1 cup
Calories per serving:120
Fat:1 gram
Exchanges: 1/2 milk, 1 fruit

Calories listed are for yogurt sweetened with artificial sweetener.

2 tomatoes, seeded and diced
1/4 basil, washed, dried and chopped
salt to taste
1 tbsp olive oil
1 cup fresh mozarella

Mix together, place in refriegerator about an hour for flavors to blend and serve semi-chilled for best flavor.

1 bag tri-colored pasta
1/2 bottle Kraft sun dried tomato vinaigrette salad dressing
1/2 onion thinly sliced
1 red bell pepper, thinly sliced
1 bag "steamers" broccoli-cooked according to package directions. Cooled.

Cook pasta according to package directions. Rinse in cold water and let cool. Toss with remaining ingredients in large bowl. Add additional dressing if necessary. Refrigerate 1 hr. or more for flavors to blend.
