Forget gas, use Mesquite, it burns hot, wait until the flames have died down before cooking.
Grill four to six minutes per side.
If you flip it to soon you won't get a good crust.
Flip it more than once and you'll lose all the juices.

...And never use a fork, it pierces the surface and that's another way to lose the juices. Less time if you like yours still mooing. I agree with the mesquite....nothing is better.

I just sprinkle some sea salt, and let it stand for an hour at room temperature, to get the meat aging.

I absolutely love sea salt. Looks like we treat steak the same way. Favorite cut?

I always use gas because I we are always hungry:D and don't have much time to hang out a drink. The flavor is not in the wood or gas it is in the steak and ingredients.;)
I always use a gas grill and cook it on high. The rest I agree with you guys, no forks and don't turn it too soon. I like mine still mooing a little.
I prefer sirloin for mine.

Comadre, there IS a difference in flavor. A gas grill gives you bland tasting steaks because they are not infused with the smokiness the wood provides. The seasonings can't imitate the flavors. Just ask the grill masters on the Food Network. Hee hee;)
Okay Comadre, I am not a chef but, I can tell you the steaks come out pretty good on a gas grill. I have never grilled at bland steak.:p
